Slow Cooker Pulled Pork made with pork loin is so juicy, top with coleslaw, pickle chips, and tangy BBQ sauce all on a golden bun.

You can serve it with Cowboy Baked Beans, Potato Salad, or Macaroni Salad for dinner, BBQ cookouts, or summer gatherings.

Years ago I wanted to make pulled pork sandwiches without the fatty bits and gristle of a traditional pork butt, so I tried loin and it worked beautifully. I really prefer this cut over some of the other heavier cuts, it has all the deep flavor and works great in a slow cooker...

Let's Make It!

  • 5 pounds pork loin roast
  • ¼ cup BBQ rub
  • 2 tablespoons canola oil
  • 2 cloves crushed garlic
  • 1 large sweet yellow onion diced
  • 1 - 12 ounce Coca Cola soda (can or bottle)
  • 18 oz BBQ Sauce spicy, sweet, or smoky your choice

For Sandwiches, You Need

  • 12 buns
  • 4 cups coleslaw
  • pickle chips
  • extra bbq sauce

Boneless Pork Loin Roast Tips

  • Pork loin roasts are inexpensive and easily feed a crowd. I find great quality ones at Costco, sometimes I cut them depending on the recipe.
  • They are sold in a vacuum-sealed package which is ready to pop in the freezer if you won't cook it right away.
  • It can be cooked in slow cooker/crockpot recipes as well as in the oven.
  • You avoid the higher fat, gristle, and inedible parts.
  • Season well with my amazing grill rub, and slow cook or roast in the oven for approximately 20 minutes per pound at 375 degrees.
  • Freeze your leftovers, I use either zip-top bags or a food saver machine to get an airtight seal, there are endless ways to use pork in recipes.
  1. Season the pork loin all over with grill BBQ rub.
  2. Optional step but makes it taste great. In a large heavy frying pan on medium-high heat, add the canola oil. Next, add the pork and cook, turning frequently till all sides are brown.
  3. Move the browned pork, chopped onions, and garlic to your slow cooker or crockpot.
  4. Add a 12 oz can of Coca-Cola and the barbecue sauce over the pork loin.
  5. Cook on HIGH for 4 hours or on LOW for 7-8 hours.
  6. Remove pork into a large pan (roasting pans work well) and shred with 2 forks.
  7. Serve pulled pork piled on buns with extra bbq sauce, sliced pickle chips, and coleslaw.

PRO TIP: There will be liquid leftover in the slow cooker, if you want you can place it on the stove in a small pan, reduce it down, and pour over pulled pork to keep it even juicier.

What temperature for pork loin in a slow cooker?


Cook the pork loin in a slow-cooker or crockpot until the pork has an internal temperature reads 145 degrees and it should easily shred with two forks to use for pulled pork sandwiches and other dishes.

Ingredients

Notes

Browning

This is an optional step but makes your pulled pork taste great. By the way, there are slow cookers on the market that saute, and I highly recommend those and love mine. You can use a large heavy frying pan on medium-high heat, add the canola oil.
Next, add the pork and cook, turning frequently till all sides are brown. Whenever you brown meat you are creating the Maillard reaction aka "caramelization". The golden-brown crust created at higher heat in a pan condenses the proteins and sugar adding a depth of flavor and adds beautiful color. 

Pan Sauce

There will be liquid leftover in the slow cooker, if you want you can place it on the stove in a small pan, reduce it down, and pour over pulled pork to keep it even juicier.
