    How To Make Easter Deviled Eggs

    This recipe is just a bit different from the classic deviled eggs I have made so many times. It does not have mustard but has fresh avocado to get the pretty color of grass!

    • 6 boiled eggs
    • 1 large avocado ripe
    • 2 tablespoons mayonnaise
    • 1 tablespoon fresh lemon juice
    • ½ teaspoon sea salt
    • 1 teaspoon finely chopped fresh chives

    • 12 long parsley stems garnish
    • tiny sprigs fresh herbs - thyme, parsley, carrot tops garnish
    • tiny flowers or petals edible flowers (research to be sure they are safe)

    Steamed Hard Boiled Eggs Recipe
    Steamed hard boiled eggs cook perfectly every time with no green ring. So easy to peel, the eggshells miraculously slip right off in minutes!

    1. Make hard-boiled eggs. Use a Boil, Instant Pot, or Steam boil method for the eggs.
    2. Peel egg shells and slice the boiled eggs in half. PRO TIP: Instead of scooping out the yolk with a spoon (which can tear the egg) gently push from the back of the egg and pop the yolk out!
    3. In a bowl, add the yolks, and break up finely with a fork, then add the avocado, mayonnaise, lemon juice, sea salt, and chives.
    4. Mix until well combined with a hand mixer, or by hand (it just takes longer!)
    5. Load into a large zip-lock bag or piping bag fitted with a large star tip. PRO TIP: Use a large Mason jar to hold the pastry bag while you fill it with a spatula.
    6. Place eggs on a dish. Pipe the filling into the eggshells.

    Garnish with long parsley stems for basket handles, a few tiny sprigs of herbs, microgreens, or edible flowers. Serve on a tray garnished with more flowers and herbs.

    PRO TIP: Bend or crack the parsley stems to make them stay in the deviled eggs as little basket handles.

    Deviled Egg Make-Ahead Tips

    1. Boil the eggs, peel eggs, slice in half, and keep them covered on a tray.
    2. Fill your ziptop bag with a piping tip and the egg filling.
    3. Cut your tiny herb and flower pieces, keep them refrigerated, and then assemble in minutes right before your party on a beautiful white tray and garnish.

    Edible flowers are just that-edible, but not all flowers can be eaten or are safe. The best thing to do is order them online, but there are other ways to get them.

    How To Transport Deviled Eggs To A Party

    The best way to make and store your deviled Easter eggs is to place them in plastic deviled egg boxes. There are trays inside with little cups that keep the eggs stable while carrying and driving in the car.

    How To Dye Deviled Eggs?

    We have all dyed eggs at Eastertime, but then I saw people color their deviled egg halves I thought it was a great way to make a festive twist!

    That is a really cute idea if you have the time to dye eggs once they are peeled and the yolk is removed. Here is how you make them!

    1. Use regular grocery store food coloring, or you can use drops of neon gel food coloring, or natural food dyes like beet juice.
    2. Bright fun colors that would be cute are yellow, blue, pink, green orange, and purple.  
    3. Make hard boil eggs and peel them, slice in half pop out the yolks.
    4. Set up a glass for each color of easter egg dye.
    5. Add ½ cup cold water in each cup with 5-10 drops of food coloring.
    6. Add 1 tablespoon white vinegar to the colored water and stir.
    7. Place egg whites into the cup.
    8. The desired color will take at different times, some white shells need to soak longer to get vibrant colors.
    9. Remove colorful egg white halves to a wire rack lined with paper towels on a sheet pan.
    10. Dry completely for an hour, then fill the colored deviled eggs and decorate.
    What are classic deviled egg ingredients?

    The egg yolks are whipped or mixed with mayonnaise (or sour creme, creme fraiche, or cream cheese), mustard (yellow or Dijon), paprika, salt, and pepper, they are replaced inside the egg white halves and served are cold.

    Many different flavorings and toppings can be added to deviled eggs with endless possibilities.

    Deviled eggs date back to the Roman Empire, and got popular in the 1940s. Everyone loves them! Eggs are hard-boiled, then filled with whipped yolks and other tasty ingredients.

    Ingredients

    • 6 boiled eggs

    • 1 tablespoon fresh lemon juice
    • ½ teaspoon sea salt
    • 1 teaspoon fresh finely chopped chives

    Instructions

    • Boil, Instant Pot, or Steam boil method the eggs. Peel and slice the boiled eggs in half.
    • PRO TIP: Instead of scooping out the yolk with a spoon (which can tear the egg) gently push from the back of the egg and pop the yolk out!
    • In a bowl, add the yolks, and break up with a fork or spatula into fine crumbs (or they get caught in the tip of the piping bag), then add the fresh avocado, mayonnaise, lemon juice, sea salt, chives.
    • Mix until well combined with a hand mixer, or by hand (it just takes longer!) and load into a large zip log back fitted with a large star tip. PRO TIP: Make sure to break up all the egg yolks or they will get stuck in the piping tip. And use a large Mason jar to hold the piping bag while you fill it with a spatula.
    • Pipe the filling into the boiled eggshells, and garnish with long parsley stems for basket handles, a few tiny sprigs of herbs, microgreens, or edible flowers. Serve on a tray garnished with flowers and herbs. PRO TIP: Bend or crack the parsley stems to make them stay.

    Notes

    Egg Filling

    • Instead of scooping out the yolk with a spoon (which can tear the egg) gently push from the back of the egg and pop the yolk out!
    • Also, you can certainly mix the deviled egg filling with a spoon or whisk, but a hand mixer gives you a creamy fluffy texture that pipes beautifully.
    • Use a large gallon zip-top bag and large star tip to pipe the filling into the egg white shells, it looks gorgeous and professional.
    • Use a large Mason jar and drop your piping tip into a pastry bag or zip-top bag and fill with your deviled egg filling mixture. 

    Make-Ahead Tip

    Boil the eggs, slice in half, and keep them covered on a tray. Fill your ziptop bag with a piping tip, and have your tiny herb and flower pieces ready to go the day of your party, then assemble in minutes right before your guests arrive!
