Steamer Baskets Are The Little Trick!
There are so many different ways to make hardboiled eggs. There is the classic boil method, starting in cold water, pinpricks into the eggshell, and even oven baking in a muffin tin.
People use new eggs, and older eggs, and often even those get green rings around the yolks, which is not a pretty sight. And worst of all, all seem impossible to peel, and chunks of egg break off.
Recipes that require boiled or chopped eggs as one of the main ingredients will now be easy to prep and serve for your gathering once you learn the secret.
This new way to cook the perfect egg has a simple trick of using steam to hard boil eggs, it takes less time, and you can have them ready for recipes fast. All you need is an inexpensive vegetable steamer basket and you are good to go!

How To Steam Easy Peel Eggs
- 1 dozen organic eggs (small or large)
- water
- In a medium large pot, add 2 inches of water to the bottom of the pan and bring to a boil over high heat.
- Place your steamer basket or steaming rack in and carefully add the eggs into the steamer basket with a fine mesh strainer. I found that if you load on alternating sides, it keeps it from tipping over into the boiling water.
- Cover with a lid and steam for 12 minutes of steaming time.
- Prepare a large bowl with lots of ice and water.
- After 12 minutes of steaming the eggs, turn off the heat and place all the eggs in an ice water bowl to chill for 15 minutes, add more ice if necessary.
- Roll the egg on a cutting board or any flat surface, and slip the shells right off! Dip in a bowl of clean water to remove any pieces of shells. You will get perfectly smooth hard boiled eggs to use in recipes.
Why Steaming Eggs Works VS. Boiled
We want to avoid overcooked yolks, tough rubbery whites, and ripped-up, torn eggs. The best way to cook hard-cooked eggs is to steam them in a pot as we avoid all those things.
Start the eggs in hot water: By starting the eggs steaming on a rack over boiling water (rather than cold water) makes the egg white protein fuse and stick together, preventing them from clinging onto the shell membrane. This is why the egg shell slips right off!
Less overall cooking time: Since you are steaming, you don't need as much water in a large pot of water for boiling eggs. And the water for steaming is only a couple inches and it's just enough water to come up under the steamer rack and boils in minutes saving time.
Steam, don’t boil: Steaming doesn’t lower the temperature of the water as the eggs rest on the rack and begin to cook, and they steam evenly all at the same time.
Peel immediately after steaming: Fill a large bowl with ice water. Chill the eggs for 15 minutes in the icy cold water. This shock assists to get the shell ready to come loose. Gently tap each one on a board, till it cracks, and then comes right off. All your eggs will peel in just a couple minutes.
Peeling eggs fast: The best part of this cooking process is you can peel a great number of eggs very fast, each will have a smooth surface.
An unattractive yet harmless green-gray ring can appear around the yolk when they are hard cooked in boiling water for too long.
It is due to hydrogen in the egg white combining with sulfur in the yolk and this discoloration
The discoloration is caused by a chemical reaction from sulfur (the white) and iron (the yolk), which both react naturally to form ferrous sulfide at the surface of the yolk making the ring appear.

Do you have to use a cast iron dutch oven? Will another type of pot work? I live in a small home and don't have a dutch oven.
