Slow Cooker Pulled Pork Sandwiches

Ingredients

  • 5 pounds pork loin roast
  • ¼ cup BBQ rub
  • 2 tablespoons canola oil
  • 2 cloves crushed garlic
  • 1 large sweet yellow onion diced
  • 12 ounce Coca Cola soda can or bottle
  • 18 oz BBQ Sauce spicy, sweet, or smoky your choice!

Coca Cola Pulled Pork Sandwiches

  • 12 buns
  • 4 cups coleslaw
  • pickle chips
  • extra bbq sauce

Instructions

  • Season the pork loin all over with ¼ cup grill BBQ rub.
  • Optional step but makes it taste great! In a large heavy frying pan on medium high heat, add the canola oil. Next, add the pork and cook, turning frequently till all sides are brown.
  • Move the browned pork, chopped onions, and garlic to your slow cooker or crockpot.
  • Add a 12 oz can of cola and the barbecue sauce over the pork loin.
  • Cook on HIGH for 4 hours or on LOW for 7-8 hours.
  • Remove the cooked pork into a large pan (roasting pans work well) and shred with 2 forks.
  • Serve pulled pork piled on buns with extra bbq sauce, sliced pickle chips, and coleslaw. A great side dish to go with these pulled pork sandwiches is Cowboy Baked Beans.
  • There will be liquid leftover in the slow cooker, if you want you can place it on the stove in a small pan, reduce it down, and pour over pulled pork to keep it even juicier.

Notes

Browning

This is an optional step but makes your pulled pork taste great. By the way, there are slow cookers on the market that saute, and I highly recommend those and love mine. You can use a large heavy frying pan on medium-high heat, add the canola oil.
Next, add the pork and cook, turning frequently till all sides are brown. Whenever you brown meat you are creating the Maillard reaction aka "caramelization". The golden-brown crust created at higher heat in a pan condenses the proteins and sugar adding a depth of flavor and adds beautiful color. 

Pan Sauce

There will be liquid leftover in the slow cooker, if you want you can place it on the stove in a small pan, reduce it down, and pour over pulled pork to keep it even juicier.
