Showing how to make breakfast egg muffins in muffin pans with chopped vegetables, bacon, sausage, and ham.

Breakfast food can be so incredibly easy with Egg Muffins! They can be made just the way you want them in a muffin pan with cooked breakfast meats like smoked ham, bacon, or crumbled sausage. Or fill them with a diced confetti of vegetables and top them with different herbs and cheeses.

There are five egg muffins recipes for you to try, and it's so simple to make individual muffins for everyone in your family for weekday breakfast.

Whip up a big batch of these breakfast muffins so that on busy mornings you can grab a couple and off you go! For brunch parties or holidays, serve with some fresh fruit salad, and pastries and the party is on...

Egg Muffin Recipes ~ 5 Flavors!

Egg Mixture

Make the base recipe for the eggs any way you prefer, and the best part is this is a flexible recipe for parties and celebrations when you need to feed a lot of people. You can use regular whole eggs, egg whites, or an egg substitute. The heavy cream adds fluffiness and the seasonings add great flavor!

This recipe makes 24 egg muffins.

  • 12 large eggs, 32 oz Egg Beaters, or Egg Whites 32 ounces
  • ½ cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon dried parsley
  • 1 teaspoon garlic salt (or garlic powder)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon finely chopped chives
  1. In a large bowl, whisk eggs to get them fluffy, and add heavy cream, Worcestershire sauce, dried parsley, fresh chives, garlic salt, and pepper.
  2. Preheat the oven to 375 degrees. Spray 2 muffin tins well with coconut oil nonstick spray or cooking spray. This recipe makes 24 egg muffins. You can make one pan vegetarian and the other one with meats.
  3. Pour egg mixture into each cup within ½” of the top of each greased muffin tin. Then add your flavor toppings!

Smoked Ham and Swiss Cheese

  • ½ cup cooked smoked ham
  • ½ cup shredded swiss cheese

Sausage Egg Muffins Recipe

  • ½ cup cooked sausage (mild or hot Italian ground breakfast sausage)
  • ½ cup shredded pepper jack cheese

Veggie Garden Herb

  • ¼ cup chopped mushrooms
  • ¼ cup diced green, yellow, or red bell pepper
  • 1 tablespoon chopped fresh herbs - baby spinach, thyme, or parsley
  • ¼ cup cherry tomatoes
  • ¼ cup grated Swiss cheese

Crispy Bacon & Brie Cheese

  • ½ cup cooked crumbled bacon
  • ½ cup diced brie cheese

Tomato Basil Pizza

  • ¼ cup chopped fresh basil
  • ¼ cup mini pepperoni
  • 1 teaspoon Italian seasoning
  • ¼ cup cherry tomatoes
  • ¼ cup Swiss or pepper jack cheese

5 Egg Muffin Flavors

  • SAUSAGE AND PEPPER JACK CHEESE: Cook ground sausage until brown and crumbled in a skillet over medium heat with a wooden spoon. Add cooked crumbed sausage and then grated pepper jack cheese on top of the egg mixture in the cups.
  • BACON AND BRIE: Cook bacon until crispy in the microwave, skillet, or in a cast iron pan. Add cooked crumbled bacon and brie on top of the egg mixture in the cups.
  • GARDEN HERB AND VEGGIES: Dice all the vegetables you are using in your egg cuts like bell pepper, mushrooms, green onions, cherry tomatoes, and add chopped vegetables and cheeses on top of the egg mixture in the cups.
  • SMOKED HAM AND SWISS CHEESE: Cut smoked ham into cubes and grate swiss cheese. Add ham cubes on top of the egg mixture in the cups, then top with grated Swiss cheese.
  • TOMATO BASIL PIZZA: Cut ripe cherry tomatoes into small pieces. Add mini pepperonis, chopped tomato, and fresh basil leaves, and sprinkle with Italian seasoning on top of the egg mixture in the cups.
  • BAKE 22-25 minutes at 375 degrees until set and golden brown. Enjoy warm with hot sauce or salsa.

PRO TIP: Freeze on paper plates in zip top freezer bags. Reheating is easy in the microwave for 1 minute. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen and reheat in the microwave when ready to serve.

Breakfast Muffin Top Tips

  • For kids, make some cheese muffins and put them in between toasted English muffins, with turkey sausage patties for a sausage egg muffin recipe that everyone will love. Wrap them in parchment paper for a sandwich to go for the most important meal of the day.
  • You can make healthy breakfast egg muffins that are low carb, keto, clean, and with just veggies, or add breakfast meats like bacon and sausage. And there are so many different ways to make this meal prep quick breakfast recipe for people's diet preferences!
  • Next time you have a lot of eggs that might go bad, this is a great way to use them up!
  • The heavy cream makes them light and super fluffy! Regular whole eggs, egg whites, and egg beaters all are great in these mini frittatas.

PRO TIP: To prep ahead of brunch parties, mix the egg mixture and leave it covered in the fridge in a bowl covered with plastic wrap. Pre chop and prep all your ingredients, and keep those in airtight containers in the fridge. Then just pour the egg mixture into the muffin pans and add your cooked bacon, sausage, cheeses, and veggies, and bake!

What to serve with egg muffins?

Make a breakfast sandwich with English muffins, crisp bacon, Candian bacon, and a slice of cheese. Toast the English muffins in a toaster oven for 1-2 minutes, and stack the sandwiches together!

Or serve egg muffins on a plate with patties of turkey sausage, sausage links, oven-baked hash browns, or pancake muffins with a big bowl of fresh fruit or pastries for a brunch party!

Flavor Swaps, Variations & Additions

  • Different Vegetables: Try some finely diced onions, green onions, red peppers like Tuscan peppers or sweet Italian peppers, fresh spinach, cherry tomatoes, or zucchini in your egg muffin cups.
  • Herbs: Slice some basil ribbons, thyme, or sage and add those into your egg bites.
  • Cheeses & Cream: Use Colby jack, goat cheese, feta cheese, or cheddar cheese. Or try Greek yogurt in place of heavy cream, it works great!
  • Seasonings: In place of garlic salt, swap in either garlic powder or onion powder. If you like it spicier, add some red pepper flakes! Or you can add a dry mustard powder in place of Dijon mustard.
  • Meats: Sausage crumbles that are precooked are great in sausage egg cups. You can use any ground pork sausage or chicken sausage in sausage muffins. Just cook the meat first.
