Yogurt Parfaits are a great make-ahead breakfast or snack on the go. This recipe includes homemade granola and can be made the night before.
Put any flavor yogurt in the bottom of the glass, layer with granola, top with fruit you love-even frozen fruit works and drizzle with honey. You can pop lids on these breakfast parfaits, and tuck them into the fridge. In just minutes you have something healthy to eat anytime...

You Will Need
Granola, preferably homemade...
Yogurt of your choice
Fruit of your choice
A drizzle of honey
Let's Make Granola (Or Buy It!)
Step 1: Roughly chop the nuts you chose. Sliced almonds work really well, pistachios are the right size too, just rough chop larger nuts like walnuts and pecans.
Step 2: In a large mixing bowl, add the coconut oil, vanilla extract, and honey, mix but it won't totally incorporate.
Step 3: Next add all dry ingredients: chia seeds, cinnamon, brown sugar, pistachios, almonds, pecans, coconut, wheat germ, bran flake cereal, and rolled oats.
Step 4: Mix all ingredients, place in a single layer on a large baking sheet pan.
Step 5: Bake 225 degrees for 1 hour. Stir every 15 to 20 minutes while baking.
Step 6: Remove from oven, stir every 20 minutes until cool. This prevents the granola from forming clumps.
TIP: Granola keeps well refrigerated in a ziplock bag or sealed in containers for several weeks!
Assemble Parfaits
In a small glass or mason jar, layer yogurt, homemade granola, fruit, and drizzle with honey.

Dry Ingredients
- ¼ cup chia seeds
- 1 teaspoon cinnamon
- 3 tablespoons brown sugar
- 1 cup unsweetened flaked coconut
- 1 cup wheat germ
- 1 ½ cup pistachios, almonds, pecans
- 2 cups bran flake cereal
- 6 cups rolled oats (not quick oats)
Parfait Toppings
- yogurt of your choice
- fruit of your choice
- a drizzle of honey

- Put the lid on the mason jar and keep refrigerated.
