S'more chocolate chip skillet cookies also called pizookies, are baked into the ultimate cookie dessert, loaded with milk chocolate, semi-sweet chocolate chips, mini peanut butter cups, graham cracker shards, and toasted marshmallows all melted together into a gooey cookie.
Mini skillet cookies are typically made in small cast iron skillets that bake the cookie dough and toppings. But you can make these in either large or small cast iron skillets, or on cookie sheets, and serve them with a big scoop of ice cream on top...

You can of course add what you love, but one of the most perfect desserts for Summer is s'mores! I love to make these for guests out at my firepit and add a whole piece of chocolate candy like Reese's peanut butter cups in between the graham crackers and hot melted marshmallow...oh so good!
So that inspired the mini Reeses...
Mini Skillet Chocolate Chip Cookies Recipe
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup softened butter
- ¾ cup granulated sugar
- ¾ cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
S'more Cookie Toppings
- 2 milk chocolate Hershey Bars (break bar into small pieces)
- 2 graham crackers (broken into pieces)
- ½ cup Semi-Sweet Chocolate Chips
- 1 cup mini marshmallows
- ½ cup mini size Reece's Peanut Butter Cups
- 2 scoops of vanilla ice cream optional topping
PRO TIP: The best thing about these is you can make individual cookies for each person, or one super large one and slice it for a real crowd pleaser.
Make Skillet Cookie Dough
- In the bowl of a stand mixer, beat the wet ingredients; softened butter, granulated sugar, brown sugar, and vanilla extract until creamy. Combine flour, baking soda, and salt in a small bowl. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture until combined. Or mix ingredients in the same order with a wooden spoon in a large mixing bowl.
- Press cookie dough into each mini cast iron skillet, and create a slight bump in the center as the edges rise during baking.
- Add S'more Toppings evenly into the cookie dough, pushing the pieces in just a bit to help it bake evenly.
Baking Skillet Cookies
- Place in oven and bake at 400 until the center is mostly set and the marshmallows are golden brown, about 18-20 minutes bake time. Baking time can vary a bit based on the pan you use and how thick your cookie is with toppings.
- Top with scoops of vanilla ice cream, and serve hot!
Skillet Cookie Baking Tips
cookie dough: I used the classic Original Nestle Toll House Cookie Dough recipe. You can use any homemade or store bought cookie dough. And freeze any extra dough to bake up another day.
cookie sheet pans: will work fine with this recipe in case you don't have a skillet pan. Use a piece of parchment paper on your sheet pan to make it easier to clean up. Shape the cookie dough into a large 6" cookie and press the s' more toppings, and bake.
more s'more toppings: evenly add into the cookie dough, pushing the pieces in just a bit to help it bake evenly, use any type of chocolate chip you love.

Our kids loved these and had so much fun helping me top them. The smell of them baking was absolutely driving everyone crazy and I thought the kids might pass out when I pulled out the ice cream to top them. We are big into our campfire s'mores but I think this recipe may have ruined that!
