Pizookie cookies are very popular, also known as 'pizza-cookies', thus the name pizookie was born. Baked and served in personal-sized circular pans or mini cast iron skillets, and often served with ice cream on top.
A S'more is a delicious combination of graham crackers, a piece of a chocolate bar, and toasted marshmallows all mushed together. The marshmallows are toasted over an open campfire on a skewer.
S'mores got their name, because you always want SOME MORE!
Ya think there is enough chocolate in this dessert?
You can of course add what you love, but one of my Summer obsessions is s'mores out on my firepit. I love to add a Reese's peanut butter cup in between the graham crackers and hot melted marshmallow...oh so good!
So that inspired the mini Reeses...

They are SOOO delicious! Here is what you need..

How To Make Pizookies:
pick your pans:
- Go with either small 6" cast iron skillets or a large cookie sheet pan.
- Spray each small skillet with coconut oil non-stick spray (OR if using cookie sheet pans, lay a piece of parchment paper on your sheet pan).
prep toppings
- Mini Marshmallows
- Hersey Bar Pieces (break a chocolate bar into pieces)
- Mini Reese's Peanut Butter Cups
- Graham Crackers Shards (break into pieces)
make the cookie dough
- Combine flour, baking soda, and salt in a small bowl. Beat butter, granulated sugar, brown sugar, and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture until combined.
- Press cookie dough into each mini cast iron skillet, create a slight bump in the center as the edges rise during baking.
- Add S'more Toppings evenly into the cookie dough, pushing the pieces in just a bit to help it baked evenly.

bake the pizookie
- Place in oven and bake at 400 until the center is mostly set and the marshmallows are golden brown, about 18-20 minutes.
- Remove from the oven and allow to cool for 15 minutes before slicing and serving.
- Top with scoops of vanilla ice cream, and serve!

One More S'more Dessert Recipe:

Did you know National S'more Day is August 10th? And I love it since it is made in the oven, no campfire is required.
And a scoop or two of vanilla ice cream on top, don't you agree?

Our kids loved these and had so much fun helping me top them. The smell of them baking was absolutely driving everyone crazy and I thought the kids might pass out when I pulled out the ice cream to top them. We are big into our campfire s'mores but I think this recipe may have ruined that!
