What Is No-Bake Cheesecake?
This recipe was one my Mom always made in the summertime, and probably for good reason.
- It is easy, NO-BAKE cheesecake filling (thus no heat in the kitchen) that doesn't use eggs and there is no fuss. It is simply whipped with a hand mixer!
- The juicy sweet peaches are so good brushed with honey on that fluffy cream cheese filling in a NO-BAKE graham cracker crust.
Of course we loved that Mom always served this summer dessert with a can of whip cream on the table, I mean that never led to any trouble with a bunch of kids around! 😜
You can certainly buy a graham cracker crust from the store, but if you want to make your own, it's soooo easy and fun. And a great way to use up all those graham crackers from S'mores!
Homemade Graham Cracker Crust:
- Place 2 packages of graham crackers in a Cuisinart or crush in a sealed zip-top bag and rolling pin. Place crumbs in a large bowl.
- Add ⅓ cup white granulated sugar to the bowl of with graham cracker crumbs.
- Melt 6 tablespoons butter in the microwave for 30-60 seconds, add the melted butter to the bowl.
- Combine ingredients until it comes together and forms a crumbly mixture that resembles wet sand.
- Press mixture into a ceramic or glass pie plate using a small measuring cup out the edges of the dish, and smooth the surface of the crust with the bottom of the measuring cup.
Assemble No-Bake Cheesecake:
- Whip softened cream cheese and powder sugar until fluffy using a hand mixer about 3 minutes.
- Spread sweet cream cheesecake filling into graham cracker crust, spread evenly out to edges using a mini spatula.
- Slice each peach into 16 thin slices. First, cut each peach in half, remove pit and slice each half into 8 slices.
- Arrange peach slices in the pie dish. Start in the center, lay the slices going out in a spiral circle ending at the edge of the dish.
- Brush honey onto peaches using a small brush.
- You can serve it right away, but it will set up in the fridge in about an hour so it slices neater. It's best to eat the same day with lots of whip cream!
