Homemade Prepared Horseradish Recipe
You can make homemade prepared horseradish, and skip buying the prepared product at the store. Horseradish is a spicy root vegetable and part of the mustard family that grows in colder areas.
Buy a good quality root from the Farmer's markets or grocery store. You will need 4-6 ounces of horseradish grated root, 2-3 tablespoons water, 1 tablespoon vinegar, and a small pinch of sea salt.
- Use a vegetable peeler and remove the skin off of the root, chop it into small pieces, then run through a food processor until the grated pulp is fine.
- In a bowl mix the grated pulp, water, vinegar, and salt. Keep in an airtight container or tightly covered jar and use within a month.
Horseradish FAQ
In a pinch, when you are out of prepared horseradish the best substitute is real Japanese horseradish called wasabi root. It is sold as wasabi paste and is the best substitute in small amounts for horseradish in recipes.
Runners-up and good substitutes are wasabi powder, wasabi oil, or Chinese hot mustard. Those have a similar flavor profile, but nothing beats the real thing.
A whole fresh root from a horseradish plant will last and can be stored for about four weeks in the fridge crisper drawer. Once the root is cut, it will last for about two weeks. You can also freeze it for up to six months, either whole or finely ground, but the flavor diminishes as it ages.
Without much work, you can dry horseradish into pieces or powder. To do this, first, wash the root, and grate or slice it in a food processor. Dry on a dehydrator tray following the manufacturer's directions. Or, dry on a sheet pan in the oven at the lowest heat setting, until horseradish is brittle. Then blend into a powder to use in recipes using a spice grinder or food processor.
Use as both a spice and condiment, when the root is ground or grated, it releases a strong piquant flavor and has the unique pungent aroma of horseradish. This is because the root cells contain highly volatile oils which are released by enzyme activity when the root cells are crushed.
