Cabbage Steak Recipe
Next time you are at the grocery store, don't pass by the cabbage heads. Pick one up! And make my new favorite cabbage recipe. With these simple ingredients and in just a couple of minutes you have a perfect side dish with great flavor.
We are using a roasting cooking method in order to get the right texture, and crunch in your recipe at home. If you were to bake these at a lower oven temperature, the cabbage bakes with steam, gets too tender, and will not get golden crisp.
- 1 whole green cabbage (red or savoy, big or small cabbage works too!)
- ¼ cup extra-virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika (not hot paprika)
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 whole lemon
How To Roast Crispy Cabbage Steaks
- Preheat oven to 425 degrees. Spray a large rimmed baking sheet pan (a well used dark pan is best!) with nonstick coconut oil spray. It is best to not use any aluminum foil or parchment paper. The thick cabbage slices need direct contact with the pan surface to crisp up golden brown!
- Next, remove any wilted, brown, or loose outer leaves from a whole head of cabbage. Leave the stem in place to hold the slices of cabbage together. On a cutting board, use a large sharp chef's knife and cut down the center of the cabbage into two halves, keeping the root end intact as much as possible. Then slice each half into thirds, for six 1" thick rounds.
- Lay each of the six pieces onto the prepared baking sheet pan in a single layer.
- In a small bowl, add extra virgin olive oil, garlic powder, smoked paprika, sea salt, and black pepper. Whisk well to combine.
- Using a small basting utensil, brush a generous amount of olive oil mixture evenly onto each of the thick cabbage slices. Use all the mixture and get a bit of olive oil on the surface and in the crevices of all the flat discs of cabbage.
- Roast at 425 f oven temperature for 25-30 minutes. The edges will turn brown and golden crispy and some will darken a bit.
- Place steaks on a warm platter, and sprinkle with grated parmesan cheese and toasted pine nuts. Serve with lemon wedges, that squeeze of lemon juice is amazing! Serve warm.

Cabbage FAQ
For the best cabbage, look for a tight, firm, brightly colored head that feels heavy for its size. Select a large or small one for your recipe.
The leaves should be crisp and not wilted. Napa cabbage should have tightly packed leaves, and not have dry ends or discoloration.
Cabbages are cruciferous vegetables and are closely related to cauliflower, kale, garden cress, bok choy, broccoli, and Brussels sprouts.
Green Cabbage is the most common variety you will find in grocery stores. One of the most versatile vegetables to use in salads, coleslaw, stir-frys, braising, or sauteing recipes.
Savoy Cabbage has beautiful curly ruffled lacy ridged leaves. The leaves are less tightly packed, and it is a bit more tender than green or red. It is delicious thinly sliced in salads, quickly stir-fried, or braised in butter.
Red Cabbage is a magenta dark purple color and tends to be a bit smaller than green cabbages. Pick tightly packed firm heads that feel heavy for their size. Slice thin for salads, braising, and stir-frys. A great recipe to use it for is pickled to top on fish tacos.
Napa Cabbage is also called Chinese or celery cabbage. It is not round like the green ones but has long light green leaves like romaine lettuce. Delicious raw, steamed, or lightly sauteed. The choice for making kimchi.
