Bake this American flag BLUEBERRY PIE recipe in your grill (just like an oven) at your cookout, BBQ, or July 4th party and keep your house COOL!
Yes, you read that right...a grilled dessert! Blueberry Pie done right on your grill...
I give all the credit for this creative baking idea to our dear friends Mary and Harry who live in Texas. It is so dang hot in Dallas Fort Worth in Summer, and they don't want to heat their kitchen. Mary bakes this way to keep the house cool and still enjoy baked pies all Summer. Pure baking brilliance!! The key to this process is in the preparation of your grill with a couple of things.
How You Can Use Your Grill To Bake Fruit Pies:
What You Need To Bake in Your Grill:
Step 1: Buy 6 Fire Rated Bricks <very important they will withstand direct heat off the grill (ask at the builders supply store for fire rated bricks used to make pizza ovens, not the red bricks - those won't work.
Step 2: Wrap each of the 6 Fire Rated Bricks in heavy foil.
Step 3: Place all 6 foil-wrapped bricks on the grill.
Step 4: Set oven temperature and grill surface thermometer gauges in your grill
Grill-Baked Blueberry Pie Baking Tips:
- You will need to rotate your pie about every 10 minutes (use hot pads). Grab a cool beverage and enjoy the process.
- Watch the temperatures while baking to get an evenly baked crust while not burning the pie.
- Grills will vary in their heating temperatures and "hot spots", mine runs hot so my temperature in on the lower side.
- Prepare your pie crust and let them chill in the fridge for at least 60 minutes, this helps get a nice pie
- Make your pie, and have it ready to go. Then preheat your grill.
These are the temperature gauges I used. Not necessary, but helpful as the oven gauge was getting a different reading than the surface of the bricks by over 25-50 degrees at times.
Each grill will vary a bit but don't worry, it's just a pie! The key is to not let the temperature soar over 400 degrees, or you might brown the crust a bit, and if that starts to happen, simply place some foil over the pie.
I initially heated the grill at medium-high temperature but dropped it down through the baking process as it gets hotter and hotter, and when the grill lid is open as you rotate your pie, this will drop the temperature.
Pie Crust Recipe:
2 ½ cups sifted all-purpose flour
1 tablespoon sugar
1 teaspoon salt
2 sticks (1 cup) cold butter cut into pieces
¼ cup ice water
Top crust flag design-pie crust cutter-William Sonoma (or cookie cutters/pizza dough wheel)
Step 1: Sift all dry ingredients; flour, sugar, salt. Next cut the butter with pastry cutter into the mixture (or use 2 knives going in opposite directions). Next, add ice water and form into a ball, mixing with your hands until it comes together. Wrap tightly in plastic wrap, in two halves and chill for 60 minutes.
Step 2: Roll out the 2 pie crusts, and cut one with a design you choose.
Here I used William Sonoma's Flag pastry cutter. Pretty darn cute, and so easy to do! They have these for several different holidays.
Roll out your pie crust and place in the bottom of your oven-safe pie dish.
Next, pour the blueberry filling into the pie dish.
Place top crust on pie,. Roll the edges under neatly and press.
Remember to set the grill on a lower setting. Bake in grill 375-400 degrees for 50 minutes.
Rotate pie every 10 minutes a quarter turn clockwise, this helps to bake it even!
Keep an eye on your surface grill temperature, and keep it between 350-400. The edges can get a little dark, but when you open the grill, the temperature drops fast so it will bake the pie evenly like in the oven.

Ingredients
You will need:

- Prepare your pie crust and let them chill in the fridge for at least 60 minutes ahead
- Pie Dish
- Flag pie pastry cutter from William Sonoma
Pie crust:

- 5 cups Blueberries
- ½ cup sugar
- ½ cup flour
- ⅛ teaspoon salt
- ½ teaspoon cinnamon
- 1 tablespoon lemon juice
- ½ teaspoon lemon zest
- 2 tablespoons butter cut into tiny cubes
Instructions
Get your Grill set up, here is what you need:

- Roll out your pie crust and place in the bottom of your oven-safe pie dish.
- Next, pour the blueberry filling into the pie dish.
- Place top crust on pie, I used a flag pie pastry cutter from William Sonoma. Roll the edges under neatly and press.
- Bake in grill 375-400 degrees for 50 minutes.
- Rotate pie every 10 minutes a quarter turn clockwise, this helps to bake it even. Serve slices of blueberry pie with ice cream, and enjoy!
