    Sweet Potato Casserole With Marshmallows

    The best Sweet Potato Casserole with crunchy pecans, coconut, and toasted marshmallows. A winning Thanksgiving side or Holiday dish to serve!

    Of course, you don't really have to wait until next Thanksgiving to serve it again. It can also make an appearance at any other fall or holiday gathering. Even better, it comes together in just about 30 minutes, making it the ideal last-minute side dish.

    Sweet Potato Casserole Recipe

    1 stick soft butter

    1 cup brown sugar

    1 cup chopped pecans

    1 cup sweetened coconut

    1 large can sweet potatoes

    1 cup mini marshmallows

    1. Preheat oven to 375. Place sweet potatoes in a single layer in the bottom of a non-stick sprayed casserole dish.
    2. Make the crumble topping: In a medium bowl, mix pecans, coconut, brown sugar, and butter. Set aside
    3. Sprinkle crumbly mixture evenly on top.
    4. Scatter mini marshmallows.
    5. Bake for 20 minutes until warm, and marshmallows are golden brown.

      Made this one at Christmas and had to promise to make it again for Easter so I'm back downloading the recipe! I don't think it gets any better than this. I just want to dive into the casserole dish with my mouth open. Love the coconut!
