Sausage Potato Soup Recipe
Ingredients
- 2 tablespoon butter
- 2 cups yellow onion (medium size) finely dice
- 1 tablespoon Cajun seasoning...homemade is best!
- 1 lb Cajun style sausages like andouille or Louisiana Brand from Costco
- 1 cup celery diced small
- 2 cups sliced carrots diced small
- 1 cup bell pepper diced red or green peppers
- 3 cups gold potatoes 1 pound 5-6 small dice
- ½ pint heavy cream
- 32 ounces of Chicken Stock
Easy Sausage Potato Soup Ingredient Notes:
Sausages: You can use any andouille sausage, these are a Cajun style and are smoked with spicy heat. You can also use Italian sausage, chicken, pork sausage, or turkey sausage for less spice.
Chicken Stock: Homemade bone broth Chicken Stock is the best, and you can also use chicken broth from grocery stores.
Potatoes: I used small Yukon gold potatoes, they hold up well to soups in low simmers and crockpots and stay in small pieces. If you use russet potatoes, they are high-starch potatoes. In soups, russets become soft and make a creamier soup if you prefer.
Heavy Cream: You can swap in whole milk for this creamy sausage potato soup, or leave the dairy out. But I recommend it, as it gives that extra creaminess and color.
Spicy Heat: If you want less spicy soup, skip the Cajun Seasoning and use a regular sausage. Or add a few red pepper flakes for a lower heat and maybe some crushed garlic.
Cajun Seasoning: Homemade is awesome! It is worth your time. Mix up a batch to use in your cooking. Most ingredients you most likely have on hand like garlic powder, salt, onion powder, cayenne, paprika, and more! Try your new Cajun spice mix in my Fried Green Tomatoes, so good!

2. First, finely mince the onions. Then slice the carrots, and dice the celery, bell pepper, and potatoes into small ½" pieces. PRO TIP: Same-size vegetable pieces will all cook at the same time.
3. Slice the sausage into thin slices. Note: you can use crumbled sausage for this recipe, but sliced andouille sausages are best for a great spicy kick because they are smoked and have a unique Cajun flavor!
4. In a skillet or slow cooker with sauté function, saute 2 tablespoons butter, 2 cups finely minced onion, and 1 tablespoon cajun seasoning. This brings out a deep flavor! Optional: You can skip the saute step and add the same ingredients to your slow cooker.
5. Next, add the sliced hot link sausages, diced celery, diced carrot, diced bell pepper, and diced potatoes.
6. Pour 1 quart (32 ounces) of chicken stock over the top and stir. Turn the slow cooker on high for two hours or cook on a low simmer for 4 hours. Don't let the soup boil. The potatoes and carrots should be fork-tender.
7. Right before serving, pour ½ pint of heavy cream and stir. Serve warm in bowls with bread sticks or crackers.
Storage Tips
Store leftovers in the fridge in an airtight container. You can freeze the soup in freezer containers or freezer bags, and reheating is easy. Simply defrost in the fridge, pour into a saucepan, and reheat over low heat.
Andouille is a large Cajun sausage. The flavor is smoky with a spicy kick. It is a blend of chopped pork butt aka pork shoulder, onions, and a Cajun seasoning spice mix.
