Hey, I am just saying... it's is IMPOSSIBLE to eat just one of these palmiers. Believe me, I tried, and so have my friends...but one isn't enough. Enjoy, they are soooo delish and great to serve for appetizer parties on holidays. Pair with drinks and cocktails on special occasions.
Palmier Ingredients
- 1 sheet of frozen puff pastry - thaw for 20 minutes before using on the counter and 1 box will have 2 sheets puff pastry sheets inside.
- ½ block of soft brie 3 oz, room temp - you can eat the rind, or remove as you wish.
- ½ cup crumbled crispy bacon try fully cooked bacon and crisp in the microwave, this is a fast way to make bacon and my "go-to" PRO TIP method, or you could even buy good quality bacon bits.
A Word On Puff Pastry
Puff pastry is magical. It looks just like regular dough but it doesn't have yeast, baking powder, or baking soda. So how does it rise and get those layers?

What Is Puff Pastry?
Puff pastry dough looks like a pie dough, but it’s actually many layers of dough separated by equally thin layers of butter, and this golden flaky pastry "puffs" into layers due to the water in the dough layers and water in the butter which turns into steam. It is sold in the grocery store in sheets in the frozen food section and can be made from scratch (but is very labor intensive) to be used to create exciting appetizers, entrees, and desserts.
Can you make puff pastry at home?
Yes! It can also be made from scratch but is a labor-intensive process and takes time and a precise technique to get the pastry made correctly to puff in the hot oven temperature.
What causes puff pastry to not rise when baking?
The main reason your puff pastry won't rise is due to oven temperature. Your oven needs to bake at 400 degrees, this hot oven creates steam in the pastry (from the dough and butter) so it rises or "puffs". The steam has just enough force to puff up each thin sheet of dough and then it evaporates into the oven creating a crisp airy pastry.
How To Make Crispy Bacon
- Try a pre-cooked bacon brand Since it is half cooked, it prepares easily without the mess and crisps up beautifully in the microwave on paper plates. (I use Costco Kirkland brand, but they are easy to find in the grocery store.)
- Or bake the bacon on a rack over a cookie sheet in the oven.
- Or saute bacon in a heavy skillet until crisp, this is messier but gets the job done. Drain on paper towels after cooking by your method to keep the bacon crisp. Then simply crush it in your hands or chop with a knife.
- One other option is to use good quality bacon bits, I prefer real bacon in this recipe, but that is an option!
All that BACON.......yes....oh yes.....and you can see the brie, all melty inside each palmier.
Easy Appetizer Entertaining Ideas

We chose to do this outdoors, as we both live in Southern California. The weather was cooperating but indoors is just as wonderful.

The brie and bacon palmiers are placed right in the center of the table on a piece of clean reclaimed wood. I love this idea.
It's like a giant cheese board down the center of the table! People can help themselves with all the yummy items and that look so stunning.
We served Meyer Lemon Tapenade in colorful mini bell pepper halves (hello low carb keto peeps) you could also serve it on crackers or a slice of baguette.
Spicy Candied Pecans with various artisanal cheeses. A sliced French baguette, breadsticks, fresh green beans, and sweet purple grapes also tempted guests. To sip, try these Hibiscus Tea Cocktails a low sugar/low carb keto no alcohol drink or can be a cocktail.
Arrange your food in bowls or tall containers like jars or vintage crocks. Small baskets would work as well. We even crumpled up some parchment paper to serve the cheese and candied pecans on. Snips of fresh herbs from Lidy's gorgeous French garden around the board made it all look fabulous!

Brie and Bacon Palmier Appetizer Recipe
Ingredients
- 1 sheet puff pastry thawed
- 7 ounce brie cheese room temp (you can eat the rind, or remove as you wish)
- ½ cup crumbled crispy bacon try fully cooked bacon and crisp in microwave
Instructions

- Pull puff pastry from freezer, let defrost on the kitchen counter out of the box and wrapper for 20-30 minutes.

bake the palmiers
- Preheat oven to 400 degrees. Line a large baking sheet with parchment paper.
- Remove the puff pastry from the box and rest on the board. Let thaw for about 20 minutes. Gently unroll the puff pastry to a 10 x 10-inch rectangle on a lightly floured surface. The puff pastry should open easily and be soft enough to fold.
- Dot with small pieces of brie and sprinkle with ½ cup crispy bacon.
- Roll in 1” from each side, keep folding in 1” from each, the edges meet in the middle. Turn on its side.
- IMPORTANT: Cover with plastic wrap, and chill in the fridge for at least 15 minutes. This helps the palmiers slice easily. (You can also make these ahead the day before the party and right before your party, simply pull out of fridge, slice and bake!)
- Use a small serrated knife, cut the entire piece pastry into ½. Start in the middle, slice and keep cutting each piece in ½ in middle until you have 16 total slices.
- Place each slice flat on the prepared parchment baking sheet. Push into shape if it loses its shape.
- Bake for 12-15 minutes or until golden brown. Check on them around the 12 minute mark. Lighter color baking sheets may require a few more minute than a darker baking sheets as they bake differently.
- Remove from oven and serve warm.

I am having a wine club at my house and these sound perfect. I am so confused as to what you mean by "Roll in 1” from each side, keep folding in 1” from each, the edges meet in the middle. Turn on its side." If it is rolled completely out and not cut into squares I just cannot picture what you are meaning. I guess it is just me, maybe I am missing something, 🤷♀️

Hey Cindy! So you will lay your piece of puffed pastry on the board, dot with crumbled bacon and brie pieces. Then fold in from each side a little more than an inch. Those folds meet in the middle (as you fold inward) then you are left with a log so to speak that you slice. Take a look at my Palmiers (this is a dessert recipe and uses sugar- so don't add the sugar) but it shows an image of folding the puff pastry. Hope that helps, and have a great wine club! I made these for a Zoom cooking class with my sorority sisters, and they love them!

I plan on making these, but wondered if when you prepared them through step 10, is it possible to then freeze them?
I don’t know how well they would cook from a frozen state or is it necessary for them to be cooked from a thawed state only?

Hi Gi! Although I have not tested this, my best guess is the puff pastry needs the heat of the oven to bake evenly with ingredients that are not frozen. It might work, but again I have never tried it... If you do try this, will you let us know how they turn out?
