St. Patrick's Day Green Food Snack Ideas

Green food is a tradition on St Patrick’s day for the luck of the Irish! A snack board is a super fun twist and a better way to celebrate with fresh vegetables, fruit, and a magical clean green dip. People will dance a jig as the bagpipes play, munching on these finger foods for after school snacks, a happy hour with friends, or a St. Patrick's Day party on March 17th. May you find a pot of gold at the end of the rainbow on St. Paddy's day, and celebrate with these emerald green delights.

Ingredients

  • 2 ripe avocados mashed
  • ½ cup Middle Eastern tahini or ½ cup Greek yogurt
  • ½ cold water
  • ½ whole lemon juiced
  • 1 cup fresh parsley leaves cut from a bunch
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon sea salt
  • assorted vegetables fioretto cauliflower, kiwis, fennel, green grapes, mini cucumbers, broccoli, kale, snow peas, edamame, artichokes, bell peppers, granny smith apples, cauliflower, or celery

Instructions

  • In a high speed blender, add water, yogurt, and avocados. Mix till smooth, stopping blender, and scrap down blender sides. Add fresh parsley, Italian seasoning, garlic powder, onion powder, and sea salt.
  • Or in a small bowl, mash the avocado smooth with a fork, add the Greek yogurt, mix to combine. Add water to thin if desired. Add fresh parsley, Italian seasoning, garlic powder, onion powder, and sea salt. Mix and refrigerate. Will keep fresh for 1-2 days. Garnish with fresh chives.

Green Vegetables

  • Wash your green vegetables and grab a nice board or tray. I used a big green tray!
  • Cut your green vegetables into sticks or use a crinkle cutter to get that wavy look to cucumbers, green apples and more.
  • Use a shamrock cookie cutter and cut out a piece from a green bell pepper to decorate your green dip. These look great scattered all over the tray, and tucked into little spots.
