Seafood Sauce Recipe

Ingredients

  • ½ cup mayonnaise
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped capers immature flower buds Caper plant usually pickled
  • 1 tablespoon finely diced fresh dill
  • 1 garlic clove finely minced
  • 2 tablespoons extra-virgin olive oil
  • pinch salt and freshly ground pepper

Instructions

  • Finely chop the fresh dill. I highly recommend fresh dill herbs, but dried will work, but not as pretty or have the flavor punch. Wash the lemon, then zest using a Microplane. Slice and squeeze in the lemon juice.
  • In a small bowl, whisk the mayonnaise with lemon zest, lemon juice, capers, chopped fresh dill, salt, pepper, olive oil, and crushed garlic.
    Whisk until well combined, and keep chilled in an airtight container or bowl until ready to use. That's it!

Sauce Variations

There are endless optional ingredients to add great flavor and customize it to your taste.
    • Spicy Additions: Add in some drops of hot sauce like a Tabasco, a tiny amount of cayenne pepper, a little bit of red pepper flakes, or chili powder for a spicy kick.
    • Seasoning Additions: Mix in a sprinkle of Lemon Pepper, Old Bay Seasoning, or Cajun Seasoning.
    • More Savory Ideas: Add a splash of white wine or clam juice, use lime juice and zest in place of lemon, more crushed garlic cloves, garlic powder, onion powder, or your favorite seasoning mix.  Or mix in a new fresh minced herbs like tarragon, parsley, or basil!
