Brie and Bacon Palmier Appetizer Recipe

Ingredients

  • 1 sheet puff pastry thawed
  • 7 ounce brie cheese room temp (you can eat the rind, or remove as you wish)
  • ½ cup crumbled crispy bacon try fully cooked bacon and crisp in microwave

Instructions

thaw puff pastry

  • Pull puff pastry from freezer, let defrost on the kitchen counter out of the box and wrapper for 20-30 minutes.

  • Try a pre-cooked bacon brand Since it is half cooked, it prepares easily without the mess and crisps up beautifully in the microwave on paper plates. (I use Costco Kirkland brand, but they are easy to find in the grocery store.) Or bake the bacon on a rack over a cookie sheet in the oven Or saute bacon in heavy skillet until crisp, this is messier but gets the job done. Drain on paper towels after cooking by your method to keep the bacon crisp. Then simply crush it in your hands or chop with a knife.

bake the palmiers

  • Preheat oven to 400 degrees. Line a large baking sheet with parchment paper.
  • Remove the puff pastry from the box and rest on the board. Let thaw for about 20 minutes. Gently unroll the puff pastry to a 10 x 10-inch rectangle on a lightly floured surface. The puff pastry should open easily and be soft enough to fold.
  • Dot with small pieces of brie and sprinkle with ½ cup crispy bacon.
  • Roll in 1” from each side, keep folding in 1” from each, the edges meet in the middle. Turn on its side.
  • IMPORTANT: Cover with plastic wrap, and chill in the fridge for at least 15 minutes. This helps the palmiers slice easily. (You can also make these ahead the day before the party and right before your party, simply pull out of fridge, slice and bake!)
  • Use a small serrated knife, cut the entire piece pastry into ½. Start in the middle, slice and keep cutting each piece in ½ in middle until you have 16 total slices.
  • Place each slice flat on the prepared parchment baking sheet. Push into shape if it loses its shape.
  • Bake for 12-15 minutes or until golden brown. Check on them around the 12 minute mark. Lighter color baking sheets may require a few more minute than a darker baking sheets as they bake differently.
  • Remove from oven and serve warm.

puff pastry

You can thaw Puff Pastry in the fridge overnight OR take it out of the box and the wrapper, and set on the kitchen counter for about 20-30 minutes until it can be flattened out without tearing and becomes pliable. 

brie

Bring your brie cheese to room temp - you can eat the rind, or remove as you wish. I leave the rind on, but some people don't' care for it and remove it completely. 

make-ahead tips

You can make your palmiers up through step 10, and keep in the fridge overnight covered in plastic wrap. Then bake off during or right before your party. They will be okay for a couple of hours, but are amazing right from the oven!

crumbled bacon

  • Or saute bacon in a heavy skillet until crisp, this is messier but gets the job done. Drain on paper towels after cooking by your method to keep the bacon crisp. Then simply crush it in your hands or chop with a knife.
  • One other option is to use good quality bacon bits, I prefer real bacon in this recipe, but this is an option!
