Homemade Granola Yogurt Parfaits
Easy Homemade Granola keeps well in the fridge. Parfaits in Mason jars are a great make ahead breakfast with any yogurt, fruit, and a drizzle of honey!

Dry Ingredients
- ¼ cup chia seeds
- 1 teaspoon cinnamon
- 3 tablespoons brown sugar
- 1 cup unsweetened flaked coconut
- 1 cup wheat germ
- 2 cups bran flake cereal
- 1 ½ cup pistachios and almonds (or pecans sunflower seeds etc)
- 6 cups rolled oats (not quick oats)
Parfait Toppings:
- yogurt of your choice
- fruit of your choice
- a drizzle of honey
Homemade Granola
Roughly chop the nuts you choose. Sliced almonds work really well, pistachios are the right size too, just rough chope larger nuts like walnuts and pecans.
In a large mixing bowl, add the coconut oil, vanilla extract, and honey, mix, it won't totally incorporate.
Add all dry ingredients: pistachios, almonds, pecans, chia seeds, coconut, cinnamon, wheat germ, bran flake cereal, and rolled oats.
Mix all ingredients, place in single layer on a large 10 x 15 sheet baking pans
Bake 225 degrees for 1 hour
Stir every 15 to 20 minutes while baking.
Remove from oven, stir every 20 minutes until cool. This prevents the granola from forming clumps.
Parfaits:
In a small mason jar, layer yogurt, homemade granola, fruit, and drizzle with honey.
Put the lid on the mason jar and keep refrigerated.
rolled oats
Use old-fashioned rolled oats as opposed to quick-cook oats, they have a better texture in your granola.

Homemade granola keeps well in a ziplock bag or sealed container for several weeks!

I love slice almonds, pecans, and pistachios! But other options are sunflower seeds, walnuts, cashews, pumpkin seeds, or sesame seeds would all be great.
