Broccoli Salad Recipe
Crisp green apples, crunchy broccoli, and tri-color sweet grapes create this fresh clean broccoli salad tossed in a light 3-ingredient creamy orange dressing.
Servings: 4 salads
- 4 cups small broccoli florets
- 2 cups thinly sliced purple cabbage
- 2 cups sliced green Granny Smith Apples
- 1 1/2 cups seedless grapes sliced in half or any green/purple grapes
- 1/2 cup salted pistachio nuts
- garnish: orange zest
- 1/2 cup greek yogurt
- 1 cup fresh orange juice 3-4 oranges
- zest from 2 oranges
Place all the salad ingredients together in a bowl.
In a small bowl, mix the dressing ingredients until smooth with a spatula.
Pour over the salad ingredients and toss to combine.
Serve this light healthy broccoli salad anytime, perfect for picnics or parties!
To keep broccoli salad fresh, reserve dressing on the side and pour over or toss just before serving.
cabbage purple cabbage is so gorgeous in this salad, but green would work just fine!
green apples I used Granny Smith, but again any apple would do.
grapes seedless grapes sliced in half, any green or purple grape will work. The grapes I found used this recipe are tricolor grapes, are they not gorgeous??
pistachios the salty crunch of these are so amazing, and their green color pops in this salad!
yogurt swapping out the mayo for yogurt is of course totally optional...but what is nice is this salad is safe for outdoor picnics when the temperature rises and it's hard to keep things chilled outdoors.
oranges for both their tangy zest and the juice, add a sweet freshness and help keep the apples from browning.
