S'more Pizookie Skillet Cookies

S'more chocolate chip skillet cookies also called pizookies, are baked into the ultimate cookie dessert, loaded with milk chocolate, semi-sweet chocolate chips, mini peanut butter cups, graham cracker shards, and toasted marshmallows all melted together into a gooey cookie.

Ingredients

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup softened butter (salted or unsalted)
  • ¾ cup granulated white sugar
  • ¾ cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

  • 2 Hershey Bar break bar into small pieces
  • ½ cup semi-sweet chocolate chips
  • 2 graham crackers broken into pieces
  • 1 cup mini marshmallows
  • ½ cup mini Reece's Peanut Butter Cups
  • 2 scoops vanilla ice cream optional topping

Instructions

pick your pans

  • Use either small 6" cast-iron skillets, a large cookie sheet pan or you can use a large oven safe skillet.
  • Spray each small skillet with coconut oil non-stick spray (OR if using cookie sheet pans, lay a piece of parchment paper on your sheet pan).

make the cookie dough

  • In a large bowl of a stand mixer, beat the wet ingredients; softened butter, granulated white sugar, brown sugar, and vanilla extract until creamy.
  • Combine the dry ingredients; flour, baking soda, and salt in a small bowl. Add eggs, one at a time, beating well after each addition.
  • Next, gradually beat in flour mixture until combined. Or mix with a wooden spoon in a large mixing bowl.
  • Press cookie dough into each mini cast iron skillet, and create a slight bump in the center as the edges rise during baking. Add S'more toppings pushing the chocolate bar pieces, chocolate chips, peanut butter cups, and graham cracker shards in just a bit to help it bake evenly.

bake the pizookie

  • Place in oven and bake at 400 until the center is mostly set and the marshmallows are golden brown, about 18-20 minutes bake time.
  • Baking time can vary a bit based on the pan you use and how thick your cookie is with toppings.
  • Top with big scoops of vanilla ice cream, and serve hot!

Notes

What pans are best for skillet cookies?

Any kind of a smaller oven-safe skillet will work. Cast iron is great as it holds heat and bakes evenly. Look for well-priced cookie skillets at HomeGoods TJ max, Cost Plus World Market, and online.
Mini Skillets: Use smaller skillets, like a 6 inch mini skillet, preferably a cast iron pan, or small mini skillets as they are labeled.
Large Cookie Sheet Pan: Spray with coconut oil non-stick spray or lay a piece of parchment paper on your sheet pan to help the cookie bake evenly and easier clean up.
Giant Cookie: You can make one gigantic cookie and use an oven safe large skillet or cast iron pan.
