Breakfast Egg Muffins (5 Flavors)

Breakfast food can be so incredibly easy with Egg Muffins! They can be made just the way you want them in a muffin pan with cooked breakfast meats like smoked ham, bacon, or crumbled sausage. Or fill them with a diced confetti of vegetables and top them with different herbs and cheeses. There are five egg muffins recipes for you to try, and it's so simple to make individual muffins for everyone in your family for weekday breakfast.

Ingredients

Scrambled Egg Mixture

  • 12 eggs whole-eggs, egg whites, or egg beaters
  • ½ cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon dried parsley
  • 1 teaspoon garlic salt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh chives

Sausage and Pepper Jack Cheese

  • ½ cup cooked breakfast sausage
  • ½ cup pepper jack cheese

Bacon and Brie

  • 12 bacon slices
  • ½ brie cheese

Garden Herb and Veggies

  • ¼ bell pepper red, orange, yellow finely chopped
  • ¼ mushrooms
  • ¼ cup cherry tomatoes
  • ¼ assorted grated cheeses parmesan, cheddar, asiago, Montery jack
  • 1 teaspoon kosher sea salt

Smoked Ham and Swiss Cheese

Tomato Basil Pizza

  • ¼ cup chopped fresh basil
  • ¼ cup mini pepperoni
  • 1 teaspoon Italian seasoning
  • ¼ cup cherry tomatoes
  • ¼ cup Swiss or pepper jack grated cheese

Instructions

Egg Mixture

  • In a large bowl, whisk eggs to get them fluffy, and add heavy cream, Worcestershire sauce, dried parsley, fresh chives, garlic salt, and pepper.
  • Preheat the oven to 375 degrees. Spray 2 muffin tins well with coconut oil nonstick spray or cooking spray. This recipe makes 24 egg muffins. You can make one pan vegetarian, and the other one with meats.
  • Pour egg mixture into each cup within ½” of the top of each greased muffin tin. Then add your flavor toppings!

5 Egg Muffin Flavors

  • SAUSAGE AND PEPPER JACK CHEESE: Cook ground sausage until brown and crumbled in a skillet over medium heat with a wooden spoon. Add cooked crumbed sausage with grated pepper jack cheese on top of the egg mixture in the cups.
  • BACON AND BRIE: Cook bacon until crispy in the microwave, skillet, or in a cast iron pan. Add cooked crumbled bacon and brie on top of the egg mixture in the cups.⅛
  • GARDEN HERB AND VEGGIES: Dice all the vegetables you are using in your egg cuts like bell pepper, mushrooms, and add chopped vegetables and cheese on top of the egg mixture in the cups.
  • SMOKED HAM AND SWISS CHEESE: Cut smoked ham into cubes and grate swiss cheese. Add ham cubes on top of the egg mixture in the cups, then top with grated Swiss cheese.
  • TOMATO BASIL PIZZA: Cut ripe cherry tomatoes into small pieces. Add mini pepperonis, chopped tomato, fresh basil ribbons, and sprinkle with Italian seasoning on top of the egg mixture in the cups.
  • Bake 22-25 minutes at 375 degrees until set and golden brown. Enjoy warm with hot sauce or salsa.

freezer tips

Freeze on paper plates in zip top freezer bags. Reheating is easy in the microwave for 1 minute. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen and reheat in the microwave when ready to serve.
 

make ahead tips

To prep ahead of brunch parties, mix the egg mixture and leave it covered in the fridge in a bowl covered with plastic wrap. Pre chop and prep all your ingredients, and keep those in airtight containers in the fridge. Then just pour the egg mixture into the muffin pans and add your cooked bacon, sausage, cheeses, and veggies, and bake!
