Cabbage Steaks Recipe

Ingredients

  • 1 whole green cabbage
  • ¼ cup extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (not hot spicy paprika)
  • 1 teaspoon sea kosher salt
  • ½ teaspoon black pepper
  • 1 whole lemon

Instructions

  • Preheat oven to 425 degrees. Spray a large rimmed baking sheet pan (a well used dark pan is best!) with nonstick coconut oil spray. It is best to not use any aluminum foil or parchment paper. The thick cabbage slices need direct contact with the pan surface to crisp up golden brown!
  • Next, remove any wilted, brown, or loose outer leaves from a whole head of cabbage. Leave the stem in place to hold the slices of cabbage together.
    On a cutting board, use a large sharp chef's knife and cut down the center of the cabbage into two halves, keeping the root end intact as much as possible.
    Then slice each half into thirds, for six 1" thick rounds.
  • Lay each of the six pieces onto the prepared baking sheet pan in a single layer.
  • In a small bowl, add extra virgin olive oil, garlic powder, smoked paprika, sea salt, and black pepper. Whisk well to combine.
  • Using a small basting utensil, brush a generous amount of olive oil mixture evenly onto each of the thick cabbage slices. Use all the mixture and get a bit of olive oil on the surface and in the crevices of all the flat discs of cabbage.
  • Roast at 425 f oven temperature for 25-30 minutes. The edges will turn brown and golden crispy and some will darken a bit.
  • Place steaks on a warm platter, sprinkle with grated parmesan cheese and toasted pine nuts. Serve with lemon wedges, that squeeze of lemon juice is amazing! Serve warm.
