Tachos Tater Tot Nachos Recipe

Tachos are a delicious modern twist on the classic nachos appetizer! Tater tot nachos have layers of golden crispy tater tots in place of tortilla chips loaded with juicy pulled pork or rotisserie chicken, creamy tomatillo sauce, lots of melted cheese, and other scrumptious favorite nacho toppings. Ingredients

  • 2 lb tater tots frozen
  • 2 cups pepper jack cheese grated
  • 1 cup pulled pork (or sub shredded rotisserie chicken)
  • ½ cup pickled jalapenos drained
  • 1 cup roasted tomatillo salsa
  • 1 cup sour cream
  • 2-3 green onions sliced
  • 1 avocado diced

Instructions

  • Preheat oven to 400 degrees. 
  • Bake tater tots on a parchment lined baking sheet for 20 minutes. Leave oven on.
  • Make tomatillo sauce: mix equal portions of sour cream and green tomatillo salsa in a small bowl. Set aside.
  • On a sheet pan (or cast iron pan) layer golden brown cooked tater tots, grated pepper jack cheese, shredded pulled pork (chicken or beef), and pickled jalapenos and repeat layering until all the pork, cheese, and jalapeno peppers are used. 
  • Reheat for 5 minutes to melt the cheese in the oven at 400 degrees.
  • Garnish with diced avocado and green onions, drizzle with tomatillo sauce.
  • Keep leftovers in an airtight container and use within 3 days. Or freeze leftovers and use up within a month.

Notes

Pulled Pork

This recipe time does not include the time to make pulled pork at home. Try my recipe for Pulled Pork Oven Low and Slow. You can make pulled pork in the oven, it is easy and amazing. 
Instead of pulled pork, try shredded chicken breast, shredded rotisserie chicken, crumbled or sliced grilled sausages. Those would all be great.

Tomatillo Salsa is green, but you can use any salsa brand you like.

Use your favorite nacho toppings, shred cheddar cheese or any kind of cheeses you have on hand, and even drizzle some nacho cheese sauce. Sprinkle any savory toppings on your tacho recipe. Totchos With Ground Beef

Make taco meat for these instead of pulled pork nachos. Cook the ground beef over medium heat in a large skillet. Drain the fat if you wish. Mix in some taco seasoning and add some salsa, it makes the best spicy ground beef for nachos, tacos, or taco salad.

Totchos Recipes With Chicken & Turkey

You can also use lean ground turkey, rotisserie chicken, cooked diced chicken, or ground chicken. Mix in some seasonings and layer into your recipe for totchos.

Buffalo Chicken Tots

Load crispy baked tater tots with pulled chicken seasoned with a chicken dry rub tossed in buffalo sauce and topped with crumbled blue cheese, sliced pickled jalapeno peppers, green onions, and ranch dressing.

BBQ Pulled Pork Tots

Load crispy baked tater tots with smoked pulled brisket with grilled caramelized onions, melted queso, drizzled with bbq sauce, sliced pickled jalapeno peppers, green onions, and cotija cheese.
Put pulled pork over golden baked potato tater tots, sprinkle with sauteed caramelized onions, and drizzle with buffalo sauce.
Spoon over cheese queso. Bake for 8 to 10 minutes or until meat is hot. Top with pickled jalapeño peppers, green onion, and Cotija cheese.
