Honey Mustard Pretzel Chicken Recipe

Ingredients

  • ½ cup Dijon mustard
  • ½ cup honey
  • 6 boneless skinless chicken breasts
  • 2 cups pretzels crushed

Instructions

  • Pre-heat oven to 375 degrees.
  • Line a large baking sheet or spray a wide shallow baking dish.
  • Mix Dijon mustard and honey in a small bowl and whisk together. Divide the honey mustard sauce in half, and keep one half aside to serve as a dipping sauce for dinner.
  • Place pretzels in a zip-lock bag, close the bag, and crush pretzels into smaller pieces with a rolling pin or by hand. Pour pretzel crumbs onto a shallow dish or plate.
  • On a cutting board, slice larger chicken meat pieces into smaller portions of chicken cutlets for kids. And you can even use chicken tenders, or cut each chicken piece into chicken nuggets!
  • Using tongs, dip each of the skinless breasts or small pieces into the honey mustard, then dip in the crushed pretzel pieces. Discard any excess honey mustard used to coat the meat, don't use this for dipping sauce. Use the reserved portion.
  • Lay coated chicken pieces with pretzel crust on a parchment paper lined baking sheet in a single layer or in a wide shallow baking dish.
  • Bake 45 minutes at 374 degrees Fahrenheit, until the internal temperature reaches 165 degrees on a meat thermometer.
  • Serve with honey-mustard extra sauce.

Notes

dipping sauce

Be sure to divide the sauce into two separate portions.
-One to coat the chicken then discard that bowl of sauce as it is not food safe as a dipping sauce. 
-Use the reserved sauce for dipping and to drizzle as a sauce
Spicy Chicken Variation: For a spicier version, use a hot honey mustard to coat the chicken and for the dipping sauce!
