Light-Healthy Apple Broccoli Grape Salad + Creamy Orange Dressing

Ingredients

Salad:

  • 4 cups small broccoli florets
  • 2 cups thinly sliced purple cabbage
  • 2 cups sliced green Granny Smith Apples
  • 1 1/2 cups seedless Melissa's tri-color muscato grapes sliced in half or any green/purple grapes
  • 1/2 cup salted pistachio nuts
  • garnish: orange zest

Dressing:

  • 1/2 cup greek yogurt
  • 1 cup fresh orange juice 3-4 oranges
  • zest from 2 oranges

Instructions

  • Place all the salad ingredients together in a bowl.
  • In a small bowl, mix the dressing ingredients until smooth with a spatula.
  • Pour over the salad ingredients and toss to combine.

Serve this light healthy broccoli salad anytime, perfect for picnics or parties!

    Notes
