USE A MANDOLINE, FOOD PROCESSOR, OR KNIFE TO CUT THIN SLICES...

LINE LARGE BAKING SHEETS WITH PARCHMENT PAPER

IN A LARGE BOWL ADD OLIVE OIL, SALT, PEPPER, AND TOSS SLICE  ZUCCHINI 

IN A ZIP TOP BAG MIX PARMESAN CHEESE, PANKO BREAD CRUMBS, ITALIAN SEASONING, AND GARLIC POWDER

ADD THE ZUCCHINI SLICES AND MIX WELL TO COAT

LAY IN A SINGLE LAYER ON A PARCHMENT LINED BAKING SHEET

SPRINKLE ON EXTRA PARMESAN AND PANKO CRUMBS

SPRAY WITH COCONUT OIL AND BAKE 10 MINUTES AT 450

FLIP PAN AROUND AND BAKE ANOTHER 10 MINUTES UNTIL CRISP AND GOLDEN FOR 20 MINUTES TOTAL
