Homemade Chicken Noodle Soup is true comfort food in a bowl.
Roasted chicken and a squeeze of lemon add amazing flavor. Simple homemade chicken soup heaven.
When its cold or someone you love isn't feeling so well, this is the ticket. With only 10 ingredients, it's easy to grab any ingredient you might not have on hand. In no time you can whip up a pot of good old fashion homemade chicken noodle soup for someone you love.
I have lost count how many times this recipe has hit our dinner table. Trust me its a keeper, and the leftovers freeze well. The roasted chicken adds a depth of flavor and the big diced chicken pieces make this a meal. We like to have our soup with a sprinkle of parmesan cheese, and a baguette with butter. You could add crackers or even cheese toast.
One tip, the noodles will overcook if you reheat, so sometimes I save soup on the side without noodles for leftovers and then reheat on the stove for 10 minutes and add a new batch of uncooked noodles. Just reheat about 10-15 minutes and the noodles will cook through.
So let's make this Homemade Chicken Noodle Soup from heaven!
Dice celery, carrots, and onion and gather your ingredients.
Line a large sheet pan with parchment paper for easy cleanup.
Place 4 chicken breasts season with salt and pepper on both sides.
Heat oven to 400 degrees, and roast chicken breast 25-35 minutes until cooked.
Let chicken rest until cool enough to handle, and cut into large diced pieces.
Heat large soup pot, add 3 tablespoons butter and ½ teaspoon sea salt and ¼ teaspoon pepper.
Once butter is melted, add onions and cook until soft. Then add celery and carrots, cook 5 minutes.
Squeeze ½ a lemon into the soup, you will be amazed how this brightens up the flavor!
Add the cooked chicken meat, noodles, and chicken stock and bring to a simmer.
Cook for about 10 minutes until the noodles are cooked.
Make sure the noodles are down into the soup so they cook all the way to soft.

Homemade Chicken Noodle Soup
Ingredients
- 3 tablespoons butter
- sea salt
- freshly ground black pepper
- 1 8 oz bag No Yolk Noodles or pasta of your choice
- 8 cups chicken stock homemade preferred (or 2 32 oz boxes)
- 1 brown or yellow onion diced
- 2 cups diced carrots or pre-sliced bagged carrot chips
- 3 cups diced celery or sliced on diagonal
- 4 organic boneless chicken breasts
- ½ lemon
Instructions

Barilla makes great pasta, available in your local grocery store and their gluten free options include penne, rotini, and elbows.
