Easy Roast Chicken Apple Salad with Yogurt Blue Cheese Dressing that you “Make and shake” in a Mason jar, plus learn how to oven roast chicken breasts!
For this recipe, I used Hidden Rose Apples, yes, those ” pink ones” that you are thinking, how gorgeous?
I also used some Green Dragon Apples, but you can you any bright colored apple you love…
HOW TO MAKE EASY ROAST CHICKEN:
- Preheat the oven to 425 degrees.
- On a parchment lined sheet pan, lightly spray (or rub) olive oil on both sides of the chicken breast. Then sprinkle sea salt and cracked pepper on both sides.
- Roast the chicken at 25 minutes at 425 degrees, flip them over and roast for another 25 minutes for a total of 50 minutes.
- Cool the chicken (keep refrigerated) and slice into bite-size pieces for the salad.
- 2 cups spinach fresh
- 3 apples Granny Smith, Hidden Rose ("pink"), Green Dragon
- 2 boneless skinless chicken breasts
- sea salt
- fresh cracked pepper
- 2 teaspoon olive oil
- 1/2 cup crumbled blue cheese
- 1/2 cup Greek yogurt
- 1/2 lemon juiced
- 1/2 teaspoon sea salt
- 1/2 teaspoon fresh cracked pepper
- 1/4 cup crumbled blue cheese add more if you want it chunky!

Preheat the oven to 425 degrees.

Roast the chicken at 25 minutes at 425 degrees, flip them over and roast for another 25 minutes for a total of 50 minutes.

Roast the chicken breasts 50 minutes, until they get some brown color on them, and are cooked all the way through and not pink, 165 internal temperature.

Cool the chicken (keep refrigerated) and slice into bite-size sliced pieces for the salad.

Add the crumbled blue cheese, yogurt, lemon juice, and sea salt into a Mason jar. Close the lid tightly, shake well for 1 minute. Open and add 2 more tablespoons crumbled blue cheese to make it chunkier. Add water to thin if desired.

Place a good layer of fresh spinach leaves on each plate, layer the roast chicken, sliced apples, and top with crumbled blue cheese. Spoon on the yogurt blue cheese dressing. And sprinkle on more crumbled blue cheese if you wish!
For years I have made my own salad dressings, in Mason jars. I learned how to make them decades ago watching my Mom, and her dressings were so good!
Homemade simply taste amazing, are fresh, have no yucky ingredients, and are very cost effective. So “make and shake” your own dressings to put on salads, it is worth every second it takes to make them at home!

I’v been working out in all of these burn classes lately and always looking for a unique salad to mix up my lunches and light dinners. This salad is amazing! Loving those gorgeous Hidden Rose apples.
