Marie Callendar Corn Bread Recipe
- 1 bag of Marie Callendar's Original Corn Bread Muffin Mix. This is definitely the best mix I've found, but if you can't find it for some reason, you can substitute another cornbread muffin mix brand.
- 2 cups shredded cheddar cheese or cheese of your choice
- 1 tablespoon La Victoria canned diced jalapeños
PRO TIP: Taste the canned jalapenos to be sure they are not too hot, sometimes that happens. You can chop them super fine and just add less.
Step 1: In a large bowl, mix the Marie Calendar's cornbread mix with 1 ½ cups of water, and stir in the 2 cups of grated cheese, and 1 tablespoon of finely chopped canned jalapeño. I like to use the La Victoria canned brand, but any other brand will work just fine. Stir until lumps disappear.
Step 2: Using an ice cream scoop, scoop batter ⅔ of the way full into paper lined muffin tins.
Step 3: Bake at 375 for 25 minutes until golden brown and a toothpick comes out clean.
Honey Butter: Simply mix an equal portion of soft butter to honey and slather it on your hot cornbread.

Cheddar Cheese Jalapeño Cornbread
Ingredients
- 1 Bag Marie Callendar's Original Corn Bread Muffin Mix
- 2 Cups shredded cheddar cheese or cheese of your choice
- 1 Tablespoon La Victoria canned diced jalapeños
Instructions
- Put paper liners into your muffin tin. Preheat the oven to 375 degrees farenheit.
- In a large bowl, mix the Marie Callendar's cornbread mix package with 1 ½ cups of water, stir in the 2 cups of grated cheese and 1 tablespoon of finely canned chopped jalapeño or candied jalapeno. Stir until lumps disappear.
- It is hard to pour the cornbread batter neatly into a muffin tin from a mixing bowl. So try an ice cream scoop. Simply scoop the batter ⅔ way full into paper lined muffin tins.
- Bake at 375 for 25 minutes until golden brown and a toothpick comes out clean from the middle of the cornbread muffin.
- Serve with butter or honey butter.

There is just no excuse not to make these, except that I want to eat them all. I love that I don't even have to mince the jalapeno. Just dump, stir, bake, reap the benefits! I'll be making these with chili, soups, and when I BBQ. Not too spicy for the kids either!
